The Christmas and Easter seasons required of the old-time Mazovians the preparation of exceptional foods, often prepared only during the holiday period.  Special breads were baked, a pig was butchered and various southern fruits, dried mushrooms and a variety of delicacies were brought out.
This publication is a collection of traditional holiday recipes belonging to farm wives from all over Mazovia (central Poland including the Warsaw area). These include recipes that have graced the tables of our ancestors since time immemorial.
Included are both simple and easy to prepare recipes as well as others requiring plenty of ingredients and preparation time.  We hope some of those original dishes prepared according to old, time honored recipes, will turn up on your table as well.  These recipes have been a part of our traditional country cookery for centuries.
It is our sincere wish that both modern cuisine as well as folk-style cookery prepared according to age old traditions of the Mazovian countryside, will give you joy and culinary satisfaction.
