Today's LIthuanian kitchen has adapted many dishes and spices from other regions of the world.  It has also modernized its own recipes, retaining their Lithuanian origin and flavor.  Traditional dishes based on local products, grains, fruits and spices dominate today's new recipes.  Old, out of favor, vegetables and various drinks - bitters and sours - are finding their ways to the table.  Today's fashionable restaurants and chefs are returning to natural foods, rekindling old recipes and making their own breads.
It would appear that in an era when we speak of ecology and undertake actions that try to return and maintain equilibrium it would only seem natural that one of the areas e perhaps should start from is our kitchen, that part of our everyday existance that has and is still so close to nature.
